Selecting Sparkling Wine
Sparkling wines have as many varieties as still wines, classified by either the region in which they are produced, the grapes they are made from, or their level of dryness or sweetness. Our sparkling options at Rescue Dog Wines are classified by both their taste profile and their bottling method, known as Méthode Champenoise. So which bubbles are best for you?
2019 Lisel Blanc de Blancs Brut
This limited edition, premium Brut is extra dry and full bodied after being aged 18 months on the lees—a process that incorporates the fragments of wine production into the aging cycle. Made with 100% Chardonnay, this award-winning wine has notes of brioche, green apple, and lemon.
Sparkling Rosé
Rosé all day with this dry offering. With notes of pear and apple, this sparkling rosé is perfect when paired with small bites, a buttered baguette or seafood—although it’s so versatile we think it works with almost any flavor, even desserts!
Demi-Sec Sparkling Wine
Have a craving for something sweet? Our Demi-Sec sparkling wine is semi-sweet with notes of baked pears and fruit. Complete with extra-fine bubbles, the Demi-Sec works well both before and after meals, as an aperitif with a cheese board or perfect pairing with dessert.
Bottling the Bubbly
All of our sparkling wines are bottled using the Méthode Champenoise. In our opinion, the best sparkling wines are made using this traditional method originated in the Champagne region of France. This labor-intensive process includes a second fermentation of the base wine (sometimes referred to as cuvée) inside the bottle. Using just the right amount of sugar and yeast, bubbles are formed during the aging process. The wine then undergoes clarification, lees removal, and dosage to cap off the remaining bottle, where it is then corked and ready for drinking. The Méthode Champenoise is unique as it allows the entire bubbling process to occur inside the bottle, creating the signature, tiny bubbles found in high-quality sparkling wines.
